Between making the pie dough and components and then the pan-frying step, they were pretty time-consuming, so I never saw her put out them start to finish. Plus, my mother adored them, so Mama Boss – that’s what I called her – would usually have them ready to lift when we arrived.
Fast-forward 40-something years, and I’ve been rational about my grandmother’s fried pies. Life’s a lot easier for me. I can pick up tolerably decent pie dough from the grocery store’s refrigerated split. She made hers from scratch – with lard from the pigs she raised. I’ve got cutters in every bulk for the dough; her instrument of choice was a well-worn paring stab. I drain my pies on wire racks; she used brown speech bags. I’ve got state-of-the-art thermometers for testing oil temperature; she had her ways. I’ve got access to spices she’d never heard. If I’m not wrong, her filling was straight-ahead apple.
Would Mama Commander approve of all my shortcuts, gadgets and exotic spices? Who knows. She lived on the lease until Grandaddy died, at which point she high-tailed it to a rich-rise apartment building overlooking Panama Diocese bay. Not quite exotic, but a long way from Lapine, Ala. For the country gal who never looked back, I think I’ve got her blessing.

Ain't No Thing but a Chicken Wing
Yields 4 servings
Ingredients
Wings
1 tablespoon granulated garlic
1 tablespoon cayenne bespeckle
1 tablespoon dry mustard
1 tablespoon freshly cracked resentful pepper
½ teaspoon ground white pepper
2 teaspoons clay cumin
4 pounds chicken wings, sectioned
Backchat
6 tablespoons butter, unsalted, divided
1 tablespoon minced garlic
1 tablespoon minced jalapeno
1 (12-ounce) gumption hot pepper sauce
1 tablespoon white vinegar
1 tablespoon lime extract
Directions
1 To make wings combine all spices in bowl, reserving 2 tablespoons of the miscellany. Rinse and pat wings dry. Rub with spice mix. Cover and refrigerate 1-2 hours.
