Build Your Own Mini-Biosphere
This Thanksgiving, I will have the opening to facilitate a youth camp at Boyd Hill Description Preserve .
I have been volunteering and working with the preserve and am ecstatic to be adept to conduct a nature school program that will engage teenaged minds and open new doors for better understanding of the ecosystems local us.
In order to prepare, I have been reading, researching and reading some more about kids' cosmos crafts and comparing the ideas with the resources available. While I was pondering this morning, my compatriot was rinsing one of the many glass jelly and mason jars we have in our kitchen. It dawned on us that one of the neatest and most practical things to do with these jars is not only to store flax seed or oat flour, but to figure terrariums.
What are terrariums?
Terrariums are glass jars containing a assemblage of plants that grow together. They can be any size. They are essentially mini ecosystems that recall c raise tranquility to the home, teach kids how ecosystems trade and provoke thought as to how these little biospheres subsist on their own. There are two types of terrariums, enclosed and conspicuous.

Blink and you'll miss this west midtown eatery, located in a nondiscript building on Howell Mill Road. My bud Becky and I headed there for lunch recently. The lunch menu was limited which for some might not be an issue. There are several interesting sandwich and salad selections that should appease every taste. Becky decided to go with the roasted cauliflower, chinese & thai eggplant, cilantro, spicy mayo sandwich and I decided on the roasted poblano & pimento cheese, bacon, fried green tomato sandwich with a spicy sauce and a small cup of the tomato bisque. The tomato bisque was strangely familiar (JCT Kitchen, anyone?). As for my sandwich, the pimento cheese was chunky and lumpy, not smoothly melted. The bacon had a strong smoked taste but the green tomato had a nice breading and the spicy sauce and poblano peppers added a much needed kick. Becky kept trying to identify a 'mystery' taste in her sandwich which I attributed to the abundant cilantro. For dessert we opted for the chocolate pudding, which we found out is baked into a mini mason jar. It's topped with tart whipped cream and layered between bannans. We had peanut cookie crisps on the side. I never have anything bad to say about chocolate and must say this was the highlight of our meal. Close in proximity and cusine to JCT Kitchen, Bocado needs to really seek to differentiate itself. For now its a ho, hum option for those seeking a new lunch spot.

National Pie Day is just around the corner and this year a new enterprise has both your health and taste buds in mind.
Mini Empire , the latest in a line of neighborhood desert ventures, is teaching us that size does indeed matter. With fewer calories, smaller portions and reasonable prices these treats aim to keep your wallet fatter than you.
Mini Empire is founded by Capitol Hill residents Morgan Greenseth and Christy Beaver but is not expected to have a storefront of its own until sometime before the year’s end. They are working with neighborhood cafes and hope to sell their products at Porchlight Coffee , Bluebird and possibly other locations by mid-February. The owners are celebrating National Pie Day by giving out free cup-pies Jan. 23 from 12 p.m. to 5 p.m. at Porchlight. Mini Empire brings us the advent of the “skookie,” a scone the size of a cookie, as well as cupcakes, miniature “cup-pies” and in mini-mason jars, take and bake pies for later.
Their luring pie selection includes: bourbon pecan, cranberry pear, apple cinnamon and other seasonal flavors. Perhaps even more enticing, though, are the prices. Nothing exceeds $5. And in a real pinch, you can snag a skookie for less than a dollar.
In the latest fashion, every item will come with a vegan option—an alternative Greenseth believes will capture the neighborhood’s attention. Besides the skookie, the scone that doesn’t take two cups of coffee to finish, Mini Empire will offer take and bake miniature pies. These pies, fit to feed one to two people, are frozen in small mason jars to allow you to have fresh pie whenever.
“[The mini masons] cater to those who want fresh pie but don’t have time to make one themselves,” Greenseth says.
Rather than large pies, that take days to finish, these newcomers specialize in smaller portions and shed the unnecessary fructose.
“We are trying to focus on smaller portions because we feel you should have your treats, but you don’t need to have a large amount of them,” says Greenseth. “And we use less sugar so they’re not overly sweet like you would find in other bakeries.”
