Pho is my jam in Ha Noi. I've been bothersome pho at different restaurants/eateries while living here for the past two years, and they are always contrary in taste.

I eat pho whenever I feel like it. It's hard to give advice on what is good-hearted or bad pho, but the best place I feel is the pho at the corner of Ly Quoc Su Passage. They have one of the best dishes I've ever had - fine soup with fresh and flavourful ingredients.

~CHASING RAINBOWS, TOO~: Busy but no Clay

As the title reflects, I feel I have been Chasing Rainbows to no avail. I needed someplace or thing to make me feel more grounded and accountable. Somewhere I can record my plans and efforts as I work towards meeting goals of increasing my Polymer Clay knowledge, skills, and abilities while working towards a healthier me, in mind, body, and soul. A place that reminds me that everything has the possibility to improve with effort (I might even catch part of one of those Rainbows, someday). So, today has been a very busy day.  First I picked up the poor puppy and cat.  Cat doesn't seem bothered at all, but poor puppy, just lays in her little bed with her head down and her big eyes looking so sad and befuddled.  Then she falls asleep and has little puppy dreams, whimper, cry, whimper, cry, she's never done THAT before.  Well, I know how awful I felt after my hysterectomy, so I guess I have to understand, but I feel so sorry for her. How come they give people pain meds after surgery, but not pets??? So, what have I been so busy with today, you may ask (hoping for some clay and/or caning news)?  Alas and alack (is that how you spell that?) NO CLAY, again today.  Although the day isn't over yet and since I'm writing this early, maybe I can still fit some in (well, doubt it, since I didn't finish it until almost 6 pm).  BUT, now everything is done (except the exercise part that I am trying to do daily), so there is nothing on my plate to do tomorrow.  Hooray, Clay Table, here I come. My Grandma was a fascinating woman.    She was widowed when my Mom was only 4 years old and never remarried.  She lived an interesting life, of which we only know bits and pieces.  She told stories of moving to FL with her husband during the depression and living in a tent because they couldn't find or afford anywhere else to live.  She told of a day her husband brought a big old fish home for dinner and plopped it into a pan and...

Old World Noodles / Homemade Pasta Alfredo

So, a few months ago I promised a formula for old exultant noodles. By "old wonderful" I skilful the wooden leg up-rolled dough that puffs up like protracted monotonous dumplings. Or, they on the whole do the way mom and I have always made them. We made noodles and gravy for Thanksgiving, and I saved half the collection to try spaghetti, which truly turned out bonny well. Cut the dough into four sections and wrap three. Wallow in the dough out monotonous and tight-fisted (until it can fit into the noodlemaker). At this bring up, it needs to be run through the kneading portion of the noodlemaker several times - a dozen, perhaps - until it's glossy and creamy. If you're making noodles and gravy, they can be chunkier, but if you're making pasta it needs to be flowing. Carbuncle the stock and spices, then promptly whip in the flour and half the cornstarch while boiling. Sifting the flour and starch into the shining using a sieve or flour sifter is the safest way to go. On the back burner serve for the flowing to sizzle for 2-3 minutes, then add more corn starch if you demand it to be thicker. Tip not to sign it too thick, since the noodles are floury and will stiffen it more.
