Roast cauliflower salad

My whisper suppress is an enthusiastic and creative home chef who relies on last-jiffy inspiration to create masterpiece meals. One such meal was this satiating warm salad he made recently.

As Jamie Oliver would say, "Mr Cauliflower and Mr Pork fillet are master friends" ... or so we discovered.

Pork fillet is also a surely underrated meat. It's really flavourful and tender, as well as being very lean. If the evening allows it, shining a fire and braai the meat instead - it will add a lovely smokey flavour that will quorum the rest of the salad beautifully.

Serves four

Ingredients

1 conduct of cauliflower, cut into manageable bits

1 bunch of spinach, washed and torn up

Rosa (or toddler) tomatoes, halved

A punnet of mung bean sprouts

1 clove of garlic, chopped

Teriyaki sassiness

1 tsp of fresh chilli

1 and a half lemons

Pork fillet (300g should be enough as you will slice this into the salad)

In 1901, workmen at the Val Verde Copper Mines in Anita, Arizona were prospecting around an primitive limestone fissure when they discovered a cache of ancient mammal bones. The fragments were unkindly broken, but the bone material itself was well-preserved, and a number of specimens were some time collected by B.C. Bicknell. The site also piqued the interest of globe-trotting fossil tracker Barnum Brown, who collected a few additional specimens in 1904. Pieces of out-dated horses and camels were found among those of pronghorn, squirrels, groundhogs, and embezzle gophers, as well as what appeared to be jaw fragments from a large cat.

It would take a decade and a half for the Anita bones to be fully described. Brown had intended to do it himself – he even sent for the specimens Bicknell had controlled – but he never got around to it. Eventually the bones were given to what is now the Smithsonian Native Museum of Natural History, where Oliver Perry Hay in the long run reported on them in 1921.
